Bhindi Masala

I make this very often for lunch at my home.
This goes well with soft wheat chappatties.
Ingredients:
1) Okra (bhindi) 1/2 pound
2) chopped onion 1
3) chopped tomato 1 big
4) ginger garlic paste 1 tsp
5) cumin seeds few
6) chilli powdr 1/2 tsp
7) garam masala 1tsp
8) oil, curry leaves (few) and salt
Preparation: Cut okra lengthwise , heat oil in a pan and add cumin seeds, curry leaves. let it splutter and then add chopped onion. Fry for a minute and add giger garlic paste and chopped tomato and pinch of salt. Fry fpr another 2 min. When tomato starts melting add garam masala and chilli pwdr and fry for 30 sec. Add oakra & salt (as needed)and mix well then simmer the gas and cover the pan, cook for 5 min.open the lid and fry tills its done
Note: Do not add water

Cashew chicken.


This is one of my fav chicken dish.
This rich , creamy dish goes well with veg fried rice.


Ingredients:
1) 1 pound boneless/with bone chicken cut into small pieces.
2) ginger garlic paste-2 tbsp
3) green chilli paste 1 tsp
4) lemon 1/2
5) curd 2 tbsp.
6) Freshly grated coconut 1/2 cup
7) cashew soaked 12-15
8) salt
9)oil
10) chopped onion 1
11) chopped cilantro
Preparation:
Marinate chicken with ingredients from 1 to 5 overnight.Make a paste of coconut and soaked cashew in a mixer using sufficient amount of water. Heat 2 tbsp of oil in a pan and add marinated chichen and fry on a medium flame. keep frying untill moisture is gone.Then add salt and chopped onion to it and keep frying till it gains a light golden colour. By now chicken will be cooked, else lower the flame and place the lid on the pan and keep mixing in between.
now add the coconut cashew paste and salt according to taste. you can add a pinch of chiili powder if you want it hot. cook it for another 3 min and turn off the gas , garnish with cilantro and add few drops of fresh lemon juice.

Spinach Paratha

My eat healthy mission is still ON..
Not sure how long will i be able to stick to it:)
yesterday i made Spinach paratha..it was very good..I am improving every day ...lol

Ingredients:
1) 2 cups of wheat flour.
2) 3 tbsp of besan
3) 1/2 bunch of spinach
4) 1 bunch of coriander leaved.
5) curd
6) salt
7) ginger garlic paste
8) 1 tsp chopped chilli/ or 1/2 tsp chilli powder
9) salt
10) 2 tsp oil

Preparation:
Mix all the above ingredients and make a dough (like that for chappatti) using curd.
Do not add water, spinach will leave its water and use only curd as required to make the dough.
Leave it for 15 min., then make small chappattis out of it and cook just like roti using ghee or oil. Serve with tomato chuttney(will post the recipe)

corn pakora

This week end snak ..My first try and it came out well....very tasty!!!
Ingredients:
1)Half a packet of corn
2) half bunch of coriander leaves.
3) 2 chillies
4) ginger garlic paste 1 tbsp
5) 2 tbsp chopped onion
6) 1/4 cup of besan
7) 1/4 cup of all purpose flour
8) salt
9)oil
Preparation:
crush corn and chilli coarsly in a mixer/grinder. add rest of the ingredients (except oil), mix well. Heat oil in a pan and drop the mix in round shape and deep fry.

Meat Patties with Coconut


Meat patties is an indonesian dish similar to cutlet in india.Its is simple and easy to prepare.
Ingredients:
1) 2 cups of ground beef.
2) 4 tbsp grated coconut
3) 1 tbsp gigner garlich finely chopped
4)2 tbsp all purpose flour
5) 1/2 tsp coriander seeds fried crushed
6)1/2 tsp cumin seeds fried crushed
7)salt
8) oil
9) beaten egg
10)chopped chilli 2
Preparation:
Mix coconut with ground beef . Add the ground spices and garlic, ginger, chilli and salt (as needed) and sufficient beaten egg to bind. make balls of equal size . Dust with flour. Deep fry and remove in a kitchen towel.

Beef pepper fry


Ingredients:
1) beef cut into small cubes 1Kg
2) finely chopped onion 1
3) gigner garlic paste 1 tbsp
4) pepper powder 2 tbsp
5) chilli powder 1 tsp
6) roast whole garam masala
and powder it -1 tsp
7)cooking oil
8) curd 2 tbsp
9) salt
10) coriander leaves 1 bunch chopped
11) turmeric powder 1/2 tsp
Preparation:
marinate beef with all masala powders, ginger garlic paste, salt and curd for 1 hr.
cook it in a pressure cooker by adding little amount of water.
heat oil in a non stick pan and add mustard seeds, when the seeds splutter add the cooked beef and fry for 10 min , then add chopped onion and keep frying till it gains a crisp brown colour.
garnish with coriander leaves.

Tamatar (tomato) ka salan.

It was last friday , i wanted to eat veg fried rice and some good curry with rich gravy..serached in many sites and found one very delicious looking rich curry on vahrevah site..Thought of giving it a try..and here you go..one great delicious and yummy salan..
Please please try it out at home..its really tasy.

Ingredients:
1) tomato 5
2) Green chilli 2
3) one chopped onion
4) grated coconut 1/2 cup
5) peanuts 2 tbsp
6) sesame seeds 2 tsp
7) whole garam masala
8) bay leaves
9) chopped cilantro
10)oil 2 tbsp
11) salt as per taste
12)coriander pwder 2 tsp
13) chilli pwdr 1/2 tsp
14) mustard seeds.

Preparation:

step1) roast peanuts and sesame seeds and grind to a paste.

step2) cut tomato into 2 halves and take out the pulp. grate coconut , tomato pulp and chiili to a fine paste




3) heat oil in a pan, add mustard seeds and when
the seeds splutter add whole spices, bay leaves.
Add chopped onion and fry till its golden colour,
add coriander powder and chilli powder.
Now add coconut , green chilli and tomato pulp
paste and fry till all water is absorbed.
add roasted peanut and sesame paste.
add little water and salt and bring to boil.
please cut tomatos in the pan and fill it with gravy..some tomatos wont sit properly :D
cover and cook for another 5 - 7 min.
garnish with coriander leaves.

Thai Red Curry with chicken


I am a great fan of Thai food especially the curries, So here is one of my favourite curries "red curry" with chicken.
Ingredients:
1) Bone less chicken breast sliced 1 pound.
2) coconut milk 1 can
3) olive oil 2 tbsp
4) red curry paste 2 tbsp
5) banboo shoot 1 can
6) 1/2 cup sweet basil leaves.
7) 1 red bell pepper sliced.
8) salt and pepper as needed.
9) sliced green chilli (optional, use if you want it hot)

Preparation:
Heat olive oil in a pan, add chicken and fry for 5 min, add vegetables and saute them.
Then add coconut milk and bring it to boil, now add red curry paste, basil leaves, bamboo shoot and salt . cook for another 3 minutes.serve with jasmin rice.

chicken manchurian in hot sauce

I have heard many times people saying that i dont know cooking, i am bored of cooking etc etc..but let me tell you why i love cooking..it is because I love good food and the only way i can get tasty and healthy indian food here in US is by cooking myself.
The two things that i love the most is watching TV and eating eating eating...In every 2 minutes i think about one good dish and the pleasure of eating it..he he he...one food maddy!!!
lets begin with recipe
Ingredients:
(for chicken mnchurian balls)
1) 250 gms of minced chicken.
2) gigner paste 1 tsp
3) garlic paste 1 tsp
4) chilli finely chopped 1
5)corn flour 1/4 cup
6) all purpose flour 1/2 cup
7) salt
8)1/2 tsp garam masala pwdr
Mix all the ingredients above and make lemon sized balls and deep fry them in cooking oil.
For Gravy:
1) chicken stock 2 cup.
2) chilli sauce 1/2 tsp.
3)finely chopped garlic 1 tsp
4) finely chopped ginger 1 tsp
5)sugar 1tsp
6) aginamoto 1 pinch
7) soy sauce 1 tbsp
8)mix corn flour in water 3 tsp
9)2 tsp oil
10) half a oinion chopped.
11) tomato sauce 2 tsp
12) salt as per taste
Heat oil in a pan, add chopped onion, garlic , ginger (i added some veggies to optional). Fry over medium flame for 2 min. Add soy sauce, chilli sauce, tomato sauce, sugar, aginamoto, salt and chicken stock and bring to boil. Add fried chicken balls and cook for 2 min and add corn flour mixed in water (3 tsp) and stirr continuously and its done !!..serve with noodles

Butter Dosa with tomato & onion



Ingredients:
1) 3 cups of dosa rice
2) 1 cup of urad dal
3) 1 tsp baking soda
4) 1/2 cup of cooked rice
5) butter
6)chopped onion, tomato and cilantro
7)salt




Preparation:
Soak rice and dal for 4- 5 hrs and grind them to paste.
While grinding urad dal add the cooked rice to it.
add 1 tsp of salt and 1 tsp of baking soda to this paste and leave over night .
take a non stick tawa , put few drops of oil and spread it.Now place 2 scoops of the dosa mix on it and spread evenly. spread chopped onion, cilantro and tomato mix on it spread 1/2 tsp butter or ghee on it (i used ghee ).turn the sides and till the dosa gets a crisp golden colour.

chicken roll (without egg)

Yesterday i was too lazy to make rice , curry etc for dinner hence
thought of making chicken rolls instead.
so, here is the quick and easy chicken roll without egg.

Ingredients:
1) cooked chicken
(for this marinate chicken in salt, lemon juice, chilly powder,
coriander powder, turmeric,salt, garam masala . Fry onion
add chooped tomato and then add marinated chicken and cook till done)

2) Roti /chappatti
3) chopped onion , tomato, cilantro
4) tomato sauce
5) Mayonnaise

Preparation:







make a chappatti , you can make it from scratch or buy the ready made ones.












Spread mayonnaise on it











place the cooked chicken on it as shown in pic














put few drops of tomato sauce












Add chopped tomato , onion and cilatro
on it and roll.










Roll is ready !!!

Prawn Masala







Ingredients:
1) 1 pound prawns (cleaned and de-veined)
2) 2 big onion chopped.
3) 1 big onion chopped.
4) 2 tsp of ginger garlic paste.
5) 2 tbsp oil.
6) 2 tsp chilli powder.
7) 1 tbsp coriander powder
8) 1 tsp garam masala
9) cilantro leaves to garnish
10)1 tbsp of yogurt.
11) mustard seeds 1 tsp

Preparation:
marinate the prawns with yougurt, salt and turmeric powder for 30 min.
Heat oil in a pan and add mustard seeds, when they splutter add chopped onion and salt.
Fry till the onion becomes golden coloured. Add gigner garlic paste, chilli power, coriander powder, garam masala pwdr and turn off the gas else masalas may burn. fry then for a minute and add chooped tomato and turn on the gas at low flame. When the tomato becomes soft and melts in the masala add marinated prawns to it. Add half a cup of water and cook on low flame.
Add salt and needed and cover it anc cook on low till all the water is evaporated.Garnish with cilantro leaves.

Pumpkin curry (with coconut)

This is a great curry which goes well with rice.
Its is very simple to prepare. Try it..

Ingredients:

1) 1/2 pupmkin peeled and sliced into cubes.
2) 2 medium tomatos.
3) 2 green chilli
4)few Curry leaves
5) 1/4 th of onion chopped.
6) 2 pods of garlic
7) 1/4 tsp of cumin powder.
8) grated coconut 1/2 cup.
9) 1 tsp mustard seeds.
10)salt
11)2 tsp cooking oil
12) 1/4 tsp of turmeric powder
Preparation:
1.ace the sliced pumpkin and chopped tomatos in pressure cooker,add salt and cook well.
2. a mixer grate coconut, green chilli , turmeric pwder, cumin powder a fine paste by adding water.make sure the pumpkin pieces are cooked well, using a spoon crush pumpkin pieces(if any)Mix the coconut paste from step 2 into the cooked pumpkin.in a pan heat 2 tsp oil, when the oil heats add mustard seeds . when the mustard seeds splutter add chopped onion and curry leaves. When onion turn golden brown turn off the gas . Add this to the curry and salt as per requirement.

Baingan ka salan

Baingan ka salan is one of the dish served in north indian marriages.
Mirchi ka salan is also very popular (i haven't tried it yet though).
This dish has a royal name and a royal taste!
Ingredients:
1) small Eggplants - 5
2)1 big onion finely chopped
3) 1 tomato chopped
4)1/2 tsp mustard seeds
5)few curry leaves
6)1 tsp garam masala
7)1/2 cup of grated coconut.
8)1 tbsp of sesame seeds
9)1 tsp cumin seeds
10)4 cloves of garlic
11) 1 inch ginger
12)1/2 onion
13) cilantro
14) cooking oil
15)salt
16) chopped chillies
Preparation:
Dry roast items from 7 till 12 and grind them to a paste.
Heat 2 tsp oil in a pan and add mustard seeds and wait till it splutter. Add chopped onions and chillies and fry till onions are transparent. Add tomato and sliced brinjal and salt, fry till its almost done. Add the masala paste from the first step and 1/4 th cup of water.Granish with cilantro leaves and serve hot with rice or chappatties.

Bharwa Baingan (Stuffed Brinjal Fry)


Ingredients:

1) 8 baby egg plants(cut in four, make sure that the stem remain on it and the brinjal is not seperated, fry these egg plants in oil for 45 seconds then remove and keep aside)
2) 2 tbsp of chana Dal/dhalia
3) Dry red chillied -4
4) salt
5) 2 tbsp of while gram (urad dal)
6) 1 tbsp of dry whole Coriander
7) 1 tbsp of whole cumin
8) small ball of tamrind (seed less)
9) curry leaves - 5
10) 4 cloves of garlic
11) oil
12) pinch of turmeric


Preparation:
Heat oil in a pan add chana dal and fry for few minute, when you see the chana dal becoming slighty golden coloured add urad dal and fry for a minute. Now add red chillies, coriander and cumin one by one and keep frying . when it turns to golden colour, turn off the gas and add tamrind , curry leaves, turmeric and garlic to it. Mix and leave the mixture to get cool.
Once done grind it in a mixute grinder to a coarse powder. Mix salt and add small amout of water to the powder for getting a thick paste. stuff this paste to the brinjal. Take a non stick pan and add 2 tsp of oil and place the stuffed brinjal in it, sprinkle 1/2 tsp of salt then cover with a lid and cook on low flame.Fry it for 20 min and in keep turning the sides of the brinjal in between. make sure it is fried on all four sides.

Green spinach with white Gram



Let me confess here one thing that i always used to like tasty food and would never ever think about its nutrious facts, which i now realise was wrong. It was only after i came to the US that i even started thinking about healthy food(green veg, salads, etc etc)..
My husband would always say try cooking spinach, but it was a big No No for me..


I am now slowly trying to cook more of green veggies and eat healthy


So, This spinach dish was my first try it came out very well..Really tasty
Try it!!

Ingredients:
1) One bunch of fresh spinach
2) Half a cup of grated coconut
3)1/4th cup of split while gram(urad dal)
4)2 cloves of ginger
5)2 tsp cooking oil
6) salt
7) 1/2 tsp cumin powder
8)1tsp Chilli paste..This one you will get in chinese store.. i specially recommend to use this because this has a uniqe sour taste..
If you dont fine it then try mixing 1/2 tsp of lime juice to our normal chilli paste..will do the job

Preparation:
Clean spinach and chop them. Heat oil in a pan , add the split gram and keep the flame on low.
Fry until the gram turns light golden coloured, then add grated coconut and saute of half a minute. Then add chopped spinach and grated garlic..saute of 2 minutes. Add chilli paste(mixed with lime juice), salt and cumin powder. Do not cover it, keep stirring it occationally . cook till all the water has escaped and the dish is dry.

Aloo(potato) Kasa kasa Fry..


This dish is known as aloo posto in West bengal..
You can make this dry or with semi gravy..I am
making here the dry version of it, goes well with
chappatties

Ingredients:
1) 250 gm of potato
(peel and sliced into cubes)
2) 2 onions chopped
3) salt and a pinch of turmeric powder
4) 2 tbsp poppy seeds or khas khas.
5) 2 green chillis chopped
6) cooking oil
Prepearation:
Keep the sliced potatos in water so that their colour doesnt
change.Heat 2 tbsp of oil in a pan add potatos to it cover it with a
lid and stirr occationally. Add salt and turmeric and keep frying at low flame.
when potatos are half done add onion and chilli. Use a non stick pan so that potatos
do not stick to bottom. when potatos are cooked properly add poppy seeds and
fry till the dish gains a slight golden colour.

Chatpati baingan (brinjal)

Today i was thinking before posting this dish that
what is it actually called ..is it baingal fry, baingal chatni .no no..its not that
Kept thinking and i could not think of an authentic name, hence i gave my own
creative name to this cute dish :)

As the name says it is really a chatpati dish ..Try making this once and you will be in love with it..
Ingredients:
1) Brinjal 1
2) chilli 1
3) one half of a onion finely chopped
4) few cilanto chopped.
5) 1 tomato chopped
7) half a tsp garam masala
8) 1/4 tsp cumin powder
9) ginger garlic paste 1 tsp.
10) cooking oil
11) salt

Preparation:
Heat 2 tsp oil in a pan , add chopped onion and chilli and fry for 2 min..
then add sliced brinjal, salt and keep the gas stove on low and cover the pan with lid.keep stirring occationally.. Brinjals will take some time to get soft..when you see brinjals turning slightly soft add ginger garlic paste and tomato. cover and cook again, stirr in between. when you see brinjal fully cooked add garam masala and cumin podwer. again fry for another 2-3 minutes on medium heat.Garnish with cilantro leaves.

Note: I added 1/4th tsp of black pepper pwder at the end as i wanted it really hot (optional)

Achinga( Payar )Mezhukkupuratti


"Achinga " mezukkuparatti was one thing that i never liked much as a kid. The typical kerala way of making this mezukkuparatti is very pale to me , hence i made a little spicy version of this dish and i absolutely love it.
Am sharing it with you all , please try it at home
Preparation:
1) Achinga -1 bunch cut into small
2) 1 Onion finely chopped
3) 1 green chilli finely chopped
4) 1 tomato finely chopped
5) chopped ginger - 1tsp
6) chopped garlic - 1tsp
7) cumin powder - 1/2 tsp
8) oil for cooking
9) salt according to taste
10) mustard seeds
Preparation:
Heat 2 tsp oil in a non stick pan and put mustard seeds to it. when the seeds splutter add onion, ginger, garlic and chilli and fry till the onion turn little transparent. Now add tomato and cumin powder and fry for a minute. Add achinga and salt to it mix well and cover with lid. Open and stirr occationally. Keep frying till they are done.

Veg Cutlet (without egg white coating)


Ingredients:

1) Boiled vegetables 1 cup(you can use carrot, green peas, etc)
2) mashed potatoes 1 cup
3) boiled and mashed beet root 1 cup
4) Giner finely chopped 1 tsp
5) garlic finely chopped 1 tsp
6) 2 green chillies finely chopped
7) all purpose (maida powder) 1/2 cup
8) bread crumbs 1 cup.
9) garam masala powder 1 tsp
10) oil and salt
11) onion finely chopped 1 small or use half.
12) mustard seeds 1/2 tsp
13) lime 1/2
Preparation:
make sure you drain out excess water from boiled vegetables and mash them then add mashed potatos , mashed beetroot and mix well. Now in a pan heat 1 tsp oil and add mustard seeds.Once they spluter add chopped onion, ginger, chilli and garlic, fry them and then add to garam masala add chilli powder if you want cutlet to be spicy(optional). Add the mashed vegetabled to it and mix well, fry for few minutes so that moisture evaporates from the mix and it is dry.
make small balls out of the mix and dip it in maida paste (mix water and maida to make this paste) then roll it in bread crumbs. Heat oil in a pan and deep fry them.

Chicken Stew

Appam and Chicken Stew are the best compination. I made appam also on the day i made this chicken stew but appam didn't come out well.. so will keep trying and post it once it come out good.let me share the chicken stew receipe here


Ingredients:
1) Chicken 1 pound
2) 2 big onions
3) 2 green chilli
4) 1 tomato
5) 1 big carrot chopped
6) handful of green peas
7) ginger finely chopped 1tsp
8) garlic finely choppe 1 tsp
9) garam masala powder - 1tsp
10) black pepper powder - 1tsp
11) few cilantro chopped
12) 1 can coconut milk
13) oil for cooking
14) 1 tbsp coriander powder , salt (according to taste)
15) whole spices (cloves 5 , cardamom pods 4, cinnamon stick , bay leaves)
Preparation:

Heat oil in a heavy bottom pan, add the ingredients in number 15 and stir few times. Now add
chopped onion , chopped chillies, ginger and garlic and saute them . Add chopped vegetables and tomato to it and keep frying. Now add garam masala, pepper powder and coriander powder to it and After few minuted add chicken and salt to it and fry for few more minutes.Take half of the coconut milk from the can and add equal amount of water to it and pour it into the pan, cover it and cook for 10 minutes on low heat till the chicken becomes tender. Now add remaining coconut milk and cook for another 3 to 5 minutes. Garnish with cilanto leaves.

Rasgulla


Calcutta (Kolkata) Rasgullas are the most famous
sweet in West Bengal.
"Rosogulla na khele khawar ta puro hoy na"
The above line (in bengali means) the meal is
incomplete without having rasagulla at the end
and hence my blog is also incomplete without
this best sweet.


Ingredients:

milk- 4 cup
lime juice - 2 tbsp
sugar - 1 cup

Preparation

Place the milk in a heavy bottom pan
and bring it to boil , once it start boiling
add the lime juice you will see the water getting seperated
boil it untill you see water and paneer particles getting seperated.
Turn of the gas and drain the paneer in a cheese cloth.
Press it hard and try taking off as much water as possible.You can
also keep it under a heavy object for few minuted. Now take the paneer in
a plate and rub it with hands until it is soft enough to make balls.
make 12 small balls (or more). Remember the rasagullas increase in size
hence try to make the balls half the size of rasagulla. Now in a pressure cooker
add once cup water and sugar and bring it to boil. then place the 12 paneer balls
and close it and cook for 7 minutes. Rasagullas are ready!!!

Namkeen







This snack is a different version or "murukke".


For making this you need a idiappammaker (noodle maker)which has plates of different shapes. Use any shape as desired.


Ingredients:
1) 1/2 cup Rice soaked in water for 4 hrs
2) 1 cup besan (gram flour)
3) Curry leaves -4
4) 1/4th of a onion
5) ginger garlic paste 1 tsp
6) salt
7)cooking oil
8)dried red chillies 3

Preparation:
Grind rice in a mixer , also add onion, red chillies and curry leaves to it while grinding. Do not add lot of water.Take a bowl add besan flour and mix from the first step , then add salt,
ginger garlic paste . Make a dough like the one we use for chappatti.Heat oil in a heavy bottom pan and take small portion of the dough put it in the noodle maker (with required shape) and press into the hot oil. Fry both sides.

Veg Pakora


We like pakoras mostly during rainy season.
Sitting with family doing chit chat,
and having pakoras with a hot cup
of ginger tea !!! ..thats heaven.
Ingredients
1) Chickpea flour (besan) - 1 cup
2) Chopped onion -1/4 cup
3) Chopped green chilli -1
4) Sliced cauliflower -1/4 cup
5) 2 chopped spring onions
6)beaking soda 1/4 tsp (very less)
7)salt -1/2 tsp
8) ginger garlic paste -1/2 tsp
9) green peas - few
10) cooking oil

Preparation
In a bowl mix well all the items from 1 to 9 by adding water little by little. In a heavy bottom pan
heat cooking oil and using a spoon put the mix in small portion to the hot oil and fry.Drain the pakoras on kitchen towel and serve hot with tomato ketchup, dont forget the tea :)

coconut peanut chuttney


This chuttney is my fav for dosa.

Ingredients:
1)one cup grated coconut
2)roasted peanuts few (15 to 20)
3)red chilli powder -1/2 tsp
4)salt
5)1 tsp oil
6)Tamrind pulp -1 tsp
7)mustard seeds
8) curry leaves -4
9)1/4 th of a onion.

Preparation:
Grind items 1,2,3, 4,6 and 9 in a mixer and remove it to a bowl. Heat oil in a pan and add mustard seeds, when the seeds splutter add curry laves and 1/2 a tsp of finely chopped onion.
when its golden brown add this to the chuttney in the bowl and mix well.Chuttney is ready!!

Mashroom Thoran



Mashrooms are my all time favourites.
This is a kerala receipe.


Ingredients:

1. Mashrooms 10 t0 12

2.1/2 onion finely chopped.

3.green chilli 2-3 chopped

4.grated coconut 1 cup

5.1/4 black pepper powder

6. ginger garlic paste 1tsp

7.mustard seeds

8.curry leaves.

9.cooking oil

10.salt

11.Turmeric powder 1/4 tsp

Preparation

cut the mashrooms in small and soak it in turmeric water for 15-20 min.
wash and take it out of the water. Now heat oil in a pan and put mustard seeds and curry leaves, when they splutter add onion , green chilli and ginger garlic paste, fry till the onions become transparent. Now add grated coconut and a pinch of turmeric powder and fry for a minute.Add mushrooms , pepper powder, salt and cover it, do not need to add extra water. Stir in between and cook it on medium heat. Once the water is completely dried turn of the gas.





Indian Banana Pan cake


Pan cake is one of my fav for breakfast.
The banana pan cake described here
is one very easy and healthy breakfast or
snack item. I bet you will never go wrong with
this, you can make this in minutes and
it is very tasty too.
ingredients:
1)banana 2Nos
2)Maida/all purpose flour -1/2 cup
3) Rice flour -1/2 cup
4) ghee/butter- 2 tbsp
5)cashew nuts -6
6) resins -few
7) sugar powder- 2 tsp
Preparation:
mash the bananas in a bowl, add items 2 , 3 and 7 and mix well.now add crushed cashew and resins,mix again. Take a nonstick pan and aply butter when the pan heats up. Now with a big spoon spread the mix on the pan, and wait few seconds so that one side is cooked. Turn it to other side and wait till both the sides become golden coloured. Its hard to get the shape round (mine was also not round)but after making it few times you can get it correct.

Chicken Cutlet



Ingredients

1)Ground chicken -½ kg
2)Egg white beaten -2
3)1 chopped onion
4)2 boiled and mashed Potato
5)3 chopped Green chillies
6)1/2 tsp of ginger garlic paste
7)finely chopped Ginger 1 '' piece
8)finely chopped Garlic 4 pods
9)1 tsp Mustard seeds
10)Turmeric powder ½ tsp
11)Black pepper ½ tsp
12)Garam masala powder 1 tsp
13)Bread crumbs 2 cups(you can buy them from shop or make at home)
14)salt according to taste
15)Vegetable Oil
16)Coriander leaves A few
17)Curry leaves 4-5


Preparation:

Mix ground chicken with turmeric powder, salt, pepper and little bit of ginger-garlic paste and half cup of water and Cook well, until the water is absorbed.Now heat oil in a pan and add mustard seeds wait till it Splutter then add chopped onionsand fry until it becomes light golden colour.Add curry leaves, coriander leaves, green chillies, ginger and garlic and fry a minute .
then add garam masala powder and chicken and black pepper powder.Fry it on a low flame, until the entire water is absorbed, once done turn off the gas and add mashed potato.
Once the mixture is cool make medium size balls and dip it in the beaten egg and then roll in the breadcrumbs.Fry it in oil, till both the sides turn golden brown.

Roasted jumbo chicken thighs in herbs and olive oil


This was the first time that i made chicken in oven. I watch Rachel Ray's show a lot and i noticed that many of her recipes are made in oven and by looking at the finished product you
can feel its taste. They are very healthy too.
So, here i started thinking of making chicken in oven. went out with hubby to winco and we brought back some junbo chicken legs.

This was my first time, so i thought of trying with
3 pieces.


Ingredients:
1) Jumbo chicken legs (you can also use whole
chicken cut into pieces)
2) Black pepper 1 tsp
3) turmeric 1/2 tsp
4) garam masala 1 tsp
5) ginger garlic paste 1 tbsp
6) tomato sauce 1 tbsp
7) soy sauce -1 tbsp
8) chilli sauce 1 tsp
9) salt according to taste
10)olive oil 2 tbsp
11) green veggies (potato, bell pepper, spring onions, tomato etc)
Preparation
Make a paste of ingredients from 2 till 9. Make deep cuts on chicken legs ( you can also use boneless chicken) and marinate it with this paste for 3 to 4 hrs in fridge. Just apply the paste as needed (do not over coat it, keep the exta will use it later). Now take a baking tray spray oil to the base (you can apply olive oil by a spoon) now make a bed of the veggies and put the extra spice paste on it and place the marinated chicken on top and put little oil on top and its sides.
preheat oven at 350 degrees. cook the chicken for 25 to 30 min, you might wanna turn the
chicken to other side in between.Done Dana Done Done!!!!

Chingri malai curry




Ingredients
1) jumbo Prawns/white prawns
/Tiger prawns -1/2 kg
2)1 Can of coconut milk
3)1 big onion finelychopped
4)1/2 tsp turmeric powder
5)1tsp chilli powder (adjust it according to taste)
6)1 tbsp coriander powder.
7)1/2 tsp cumin powder
8) 2 tsp garam masala
9)salt according to taste
10) 1 big tomato chopped
11) 1 tbsp ginger garlic paste
12) 1/2 tsp mustard seeds
13)2 bay leaves
14)4tsp oil

Preparation

Clean the prawns and de-vein them(you can also purchase frozen de -vein prawns) and take off the skin.sprinkle pinch of salt and turmeric and keep aside for 10-15 mins. Take a non stick pan and heat 2tsp oil and then add the prawns and stir it for a minute and keep aside.Then add 2 tsp of oil to the same pan and after the oil heats up add mustard seeds.Once it splutter add onion,bay leaf and keep frying till it becomes light golden colour. To this add cumin powder,turmeric powder,red chilly powder,coriander powder,garam masala powder, salt and stir for 1 min till the aroma of the spices spread and the oil separates. Now add chopped tomato to it and fry till tomato are soft and mix well with the remaining masala. Then add the prawns and cover it for sometime. Remove lid and add half a cup of water and cook till prawns have softened.Now add coconut milk and let it come to boi.Cover it for some more time till the gravy thickens. Chingri malai curry is ready!!!

Cabbage Thoran (Kerala Dish)



Ingredients:

1)one half of a small Cabbage finely chopped
2)1 Onion finely chopped
3)Chopped Green chillies - 2 nos
4)Grated coconut -1 cup
5)Turmeric powder - 1/2 tsp
6)cooking oil - 2 tbsp
7)Mustard seeds - 1 tsp
4)Red chillies (dried)- 1
5)Curry leaves - 4 to 5
6) 2 cloves of garlic finely chopped
7) Salt according to taste.


Preparation:

Heat oil in a pan, add mustard seeds and wait till it splutter. Then add dry red chillies and curry leaves to it. Add onion , grated coconut, green chillies and garlic to it, fry it for a minute on slow flame. Add chopped cabbage , salt and turmeric and cook it on low fame . It is done when the water from the cabbage is fully gone.
NOTE: I add half a cup of finely chopped carrot to it while cooking to give it a good colour combination :)

Fish Fry /Mach Bhaja(in Bengali)/Aila meen Varattade (Malayalam)



Mackerel Fish fry.

Mackerel fish is also called Bhangra in many parts of India, and this is mostly found in coastal regions. In Bangalore i remember Buying this mackerel fish fry from a nearby hotel almost every weekend :)..Really Yummy!!

I then once tried making it at home, called mummy and she told me how to make it.It was a
success!!
You can find this fish at sea food shops. I dont like frozen fish that we usually get in many Indian stores here in US.
Ingredients:
1) 6 big mackerels insides cleaned thoroughly
2)1 tsp turmeric powder
3)1 1/2 tbsp lemon juice
4)1 tsp red chilli powder
5)1 tbsp garlic paste
6)1 tbsp ginger paste
7)1 tbsp coriander powder
8)2 tsp black pepper powder
9)salt to taste
10)oil to deep fry
Clean the insides of the fish, wash well and make deep incisions on both sides .Make a paste with with the rest of the ingredients from 2 to 9.Marinate the mackerels with the paste and keep in refrigerator for 2 hrs.Put oil in a pan and fry these marinated mackerel.

Chicken Bhuna


Chcken Bhuna is one of my favourite Chicken dishes. During my Engineering days while going back to hostel (which is 4 hrs from home) mummy will wake up early morning and make this for me so that i can have it with lunch(as usual the food in hostel was not good).This is very simple and easy dish.
Ingredients
1) One Chicken cut into small pieces.
2) one big onion, finely chopped
3)3 tbsp oil
4) 1 tbsp Ginger paste
5)i tbsp Garlic paste
6)3 tsp Coriander powder
7)1 tsp Cumin powder
8)1 1/2 tsp Chilli Powder
9)1/4 tsp Turmeric
10)1 tsp Salt (according to taste)
11)handful of Coriander Leaves, chopped
12) 1 tbsp lemon juice.
13) 1 tbsp garam masala.
Preparation:
In a heavy bottom pan, wash and put chicken pieces, now add items from 3 till 10 and lemon juice. Mix well , make sure that chicken gets coated with masala. Now marinate it for 30 min .
Now cook over medium heat for 10 to 15 min.Add oil in a nonstick pan and add onion fry for 2 min , add garam masala and then the half cooked chicken. Fry for another 10 - 15 min.
Garnish with coriander leaves.

Hydrabadi Dum biriyaani


I had tried making different biriyani several times, but this one was the best of all. I made this on 1st January 2010, new years day..I must accept that this one takes some time but it taste like heaven. If its a weekend and you are in a good mood then try this..everyone at home will be very happy and satisfied after eating this biriyaani , i promise.

let me tell you why it is called "Dum" biriyaani, it is because this is cooked on a very slow heat and this method of cooking is said to have been brought by the Mughals from Central Asia. The cooking vessel is covered tightly from top, and is cooked very slowly on indirect heat.

Lets start with the recipe and you will come to know.

Ingredients

1)1/2 kg of basmati rice

2)1 whole chicken cut into pieces

3)200gm of curd /yogurt

4)4 tsp Ginger-Garlic Paste

5)1tsp of cumin powder
6)3 tsp of coriander powder
7)2 tsp of red chilli powder
8)1/4 tsp turmeric powder

9)2 tsp of garam masala powder

10)2 Big Onions (sliced)

11)1 stick cinnamon (1 inch) & 4 bay leaves

cinnamon stick

12)3 cardamom

13)4 whole clove

14)5 black peppercorns

15)1/4 cup chopped mint

16)1/4 cup chopped cilantro

17)1/2 cup butter or Ghee

18)1 teaspoon saffron boiled in 1-cup milk

19)salt according to taste.

20) 10 Cashew nuts

Preparation:

step 1)Mix ingredients from 3 to 9 and 1 tsp of salt and make a fine paste. marinate chicken pieces with this paste and keep aside for 3to 4 hrs(keep it in refrigerator).Then cook for 15 to 20 minutes or until the liquid evaporates. Remove from heat and keep aside.

step2)Heat oil in a heavy base pan and fry onions till golden brown, remove them and keep aside. now fry cashew in the same oil till it become golden colour, remove and keep aside.

step3)Wash basmati rice drain water and keep aside for 30 min. Then boil water in a vessel add salt, and items from 11 to 15 and soaked rice, when rice is 1/4th done drain off the water (keep checking rice should not get fully/over cooked).

step4)take another heavy bottom vessel and spread 1/2 tsp of ghee/butter then spread 1/4th of chicken from step 1. put a layer of rice on it and then add chopped cilantro and mint. Spread fried onion and cashew and 2 tbsp of saffron milk. Repeat this layering 4 times. spread remaing onions on the top(if any).Place a tawa on gas stove (at slow flame), keep this vessel on it and close tighty(make sure the steam should not escape), after 15-20 min open the lid. Dum biriyaani is ready..Serve with raita, or salan.

Spicy Fish fry (pomfret)


During my childhood days while coming home from school, i will keep thinking what would be there for lunch today!!
even before i take off my clothes or bag i will start
asking my mummy "what have you made mummy, do we have fish today???"..My mummy used to say i will find a fisherman as a groom for you when you grow up :D
I miss those golden days :(
We usually purchase some fresh pomfret from "sea food city" and i like them fried.
here is the receipe

Ingredients:
1) 5 white Pomfret fish, clean and make diagonal incisions on both sides
2)5-6 Cloves of garlic
3)ginger paste 1 tsp
4)1/2 tsp of cumin powder
5)2 tsp of coriander powder
6) 1 tsp of red chilli powder (you can use 1/2 , if you dont like it hot)
7)1/4 tsp turmeric powder
4)2 tsp lemon juice
5)Salt (according to your taste)
6)fresh coriander leaves to garnish

Make a fine paste of ginger, garlic, lemon juice, coriander, salt,turmeric, cumin and chili powder.
Apply the paste on both sides of the fish and set aside to marinate for about 60 minutes.
Heat oil in the pan and carefully, place the fish into the hot oil and shallow fry on each side till it becomes golden red coloured.
Garnish Pomfret Fry with onion rings and fresh coriander leaves.


brinjal in coconut & sesame gravy



I made this first time in last summer during lent time(fasting), we do not eat any non vegetarian food during this period. so i started trying out some green veggies.This curry came out very well.
This goes well with roti paratha or rice. I would say for a dinner make tomato rice and this brinjal curry, it will be a great combination.

Ingredients:
7-8 Thai egg plant(you can use small violet
egg plants also)
1 tbsp of sesame seeds.
2 tbsp of peanuts
1 cup of coconut
1 tsp of garam masala powder
1 tsp jeera/cumin seeds
1 tsp cumin powder
1 tsp coriander powder
1/2tbsp ginger garlic paste
1 onion chopped finely3-4 green chilies ( or you can use red chilli powder)
2 tomatos chopped
salt to taste
cooking oil
mustard seeds
fresh coriander leaves

Preparation:
First roast the peanuts,sesame seeds and coconut(roast them seperately) and make it fine paste in blender. Heat oil in a pan, put mustard seeds when it starts splattering add chopped onions. Once the onions turns little golden color, add ginger garlic paste and fry again then add cumin powder,coriander powder, chilli power and garam masala powder (make sure the masala powders doesn't burn).Add tomatos and salt then keep frying for 5-6 mts, mixing occasionally.Now remove the masala to a plate. In the same pan heat oil again and put sliced eggplant into it and add salt.cover the pan and keep frying occasionally.once done , add the masala mixture to it, add water and let it cook for few minutes .Once egg plants are cooked well add paste (coconut, sesame and peanut).garnish with coriander leaves.Your eggplant curry is ready !
